I have a theory – When something is denied to you, you crave it even more. And when that something is food, your cravings know no limits. Good food takes you to another world and that world is still untouched by the woes of real life. In that world, only happiness and only happiness exists. No one bothers you there, not even your own thoughts. For a while, you stop criticizing yourself and indulge in pure bliss of savory delights that give you a tour of all the goodness in the world.
And do you know what the best part of eating your favorite dish is? The first bite! The dish is fresh and is waiting to be eaten. All kinds of aromas emanate from the dish along with the translucent vapors that are a promise of a better world. Whiffing those flavors, when you reach out for the first bite of your dish, you are almost in a trance. And when you taste the first bite, you are immediately teleported in to another world full of good memories that remind you of the delicacies from your childhood.
I am from NCR and NCR is mad about food. We have more number of restaurants and cafes than schools and colleges. Alas! These restaurants and cafes close before midnight while our cravings for tastier food flame up after midnight. This is when the famous – Dhabas – come to picture. Delhi is popular for its Dhabas – adjoining to the highway, below the fly-over, opposite to the bridge – all kinds of Dhabas exist in harmony in Delhi and all kinds of Delhites frequent these dhabas and satiate their late night, early morning, pre lunch, post dinner cravings.
To eat a heart full, we don’t mind the long queues and hours of waiting. And when it’s paranthas from Murthal, we could drive a couple of hours on the well-built NH 44 (G T Road) and relish the stuffed, white-butter laden parathas of Amrik Sukhdev, Murthal.
Originally built to cater to truck drivers in 1956, Amrik Sukhdev Dhaba today have customers from all walks of life and all parts of Delhi (if you know what I mean ;)). In fact, most of the corporate parties move to Amrik Sukhdev after the Downtown’s and Underdog’s of Gurgaon close for the day.
The Grand Paranthas of Murthal:
Resisting a parantha is the worst thing. And when the parantha is dished from Murthal, don’t even think to commit this crime. Almost, all dhabas of Murthal, serve tandoor paranthas with a liberal amount of white butter placed on them. Paranthas come in all varieties – aloo (potato), pyaaj (onion), gobhi (cauliflower), mooli (radish), gazar (carrot) & paneer (cottage cheese). The inside of the paranthas are stuffed with these fillings and outsides gleam with the butter. Served on a steel plate, you could whiff all the flavors off a parantha – hot, fresh and mouth-watering. The first bite of the parantha is the most delicious.
I tear off a generous bite with the filling going all over the parantha, dip it in Dal makhani¸and chew the bite while it’s still hot. After I have had my first bite, I take a sip of my ginger tea (hot, again) and transcend another world for the next 5 mins. As the parantha comes to the last bite, I start to come back to the real world. And just about then, I order another parantha.

If you must eat paranthas, eat with white butter. If you must eat paranthas with white butter, eat at Sukhdev. And if you must eat at Sukhdev, only and only drive you way to reach there.

White-butter laden, stuffed paranthas with tea – a combination to die for, really! You could also order a Daal on the side. The chola bhatura don’t disappoint either.
What to expect in ‘Amrik Sukhdev’, Murthal?
Waiting, standing, jostling – people can get mean at the Dhaba as the demand is more than supply. There is more than one family sitting on almost every table with people standing over their heads. But don’t worry, these people are not eyeing your food; they are eyeing your seats. Some might eye your chai (tea) like yours truly. J
